浩瀚色譜采用毛細管柱氣相色譜法測定植物油中脂肪酸組成。實驗中選用氫氧化鉀-甲醇溶液作為甲酯化試劑對樣品進行處理,再用正己烷提取,通過氣相色譜儀對脂肪酸組成進行分離和鑒定。總共分離出15種脂肪酸,結(jié)果表明:植物油中的脂肪酸以棕櫚酸、硬脂酸、油酸、亞油酸為主;只有胡麻油中油酸和亞油酸相對含量為31.7%,其他四種植物油油酸和亞油酸含量均高于75%;而菜籽油中的油酸相對含量最高,大豆油中的亞油酸相對含量最高;五種植物油中不飽和脂肪酸含量高于飽和脂肪酸含量,其中菜籽油中不飽和脂肪酸相對含量最高。
